New Recipe: Roast Beef Roll-Ups with Tangy-Creamy Horseradish Spread

Yesterday’s post was a rave about our new horseradish spread, including a long list of cool things to do with it. This is one of those cool things, finger food with a sophisticated flavor profile that’s quick and easy to assemble.

Roast Beef Roll-Ups with Tangy-Creamy Horseradish Spread

Makes 6 roll-up bites; serves 2

Ingredients

  • 2 long slices of roast beef from the deli
  • 6 Bibb lettuce leaves, or a similar amount of other greens (arugula, spinach, romaine, etc.); just ensure you have enough to loosely cover the roast beef, and remove any crunchy ribs
  • 1 tablespoon chopped red onion
  • 2+ tablespoons Tangy-Creamy Horseradish Spread (click here for the recipe)
  • Freshly ground pepper
  • 2 tablespoons grated sharp cheddar
  • 6 large basil leaves, sliced, or a similar amount of other herbs
  • Optional: ½ teaspoon finely diced jalapeno or other chile pepper of your choice
  • 6 toothpicks

Cooking Instructions

Lay the roast beef slices out on a cutting board. Arrange the greens along the roast beef, leaving a little room at each of the long ends. Sprinkle the diced red onion along each roast beef slide. Drop dollops of Tangy-Creamy Horseradish Spread sideways at 3 intervals along the roast beef (see pictures). Using a pepper grinder, generously top with pepper on both roast beef slices. Evenly sprinkle the grated cheddar and basil slices, then the chile pepper, if using. Carefully roll up each roast beef slice and secure each with three evenly spaced toothpicks, then slice into three rounds.

Notes

  • This recipe was made for two people as part of a larger appetizer platter; just increase the amounts as needed if you have more hungry diners. 
  • These roll-ups are a great dish to bring to a party; make sure you bring at least 2 per person
  • This is also a really good selection for a picnic, as it’s a wonderful finger food
  • Substitute feta or blue cheese for the cheddar if you want a tangier appetizer
