New Recipe: Tangy-Creamy Horseradish Dip (or is it a spread?)

We found a recipe for a creamy horseradish dip / spread in one of our panini cookbooks, but it depends on heavy cream for its creaminess. 

What???!!!

Heavy cream isn’t an everyday ingredient. I’d rather not indulge that way, calorie-wise, unless it’s a holiday or there are pies involved. Pies come with permission to totally ignore calories, don’t you think? 

We brainstormed and came up with our own version. 

We were delighted with the results.

Our horseradish dip/spread is thicker than the original recipe, and pairs the tanginess of Greek yogurt and lemon to perfectly complement the sharp horseradish. The creaminess stems from the yogurt, along with sour cream and mayo. No need for heavy cream!

And one more thing: you can make it in about 5 minutes. Did I say SCORE!!!???

Tangy-Creamy Horseradish Dip/Spread Recipe

Ingredients

  • ½ cup sour cream
  • ½ cup mayonnaise (I use light mayo)
  • ¼ cup plain Greek yogurt
  • 2½ tablespoons prepared horseradish
  • 1½ tablespoons lemon juice
  • ¼ teaspoon lemon zest
  • ¾ to 1 teaspoon salt
  • ½ teaspoon white pepper
  • ½ teaspoon sugar

Cooking Instructions

Combine all ingredients in a bowl. Taste and add salt if necessary. Cover and refrigerate until chilled, at least 30 minutes.

Notes

This dip is awesome exactly as-is, but you can also dress it up a bit to suit your purpose. Additions include:

  • ½ teaspoon dried dill or 1½ teaspoons chopped fresh dill
  • 1½ teaspoons chopped fresh herbs (any combination)
  • 1 tablespoon capers (definitely keep the salt at 3/4 teaspoon if you choose this add-in)
  • ¼ teaspoon Tabasco or other hot sauce to kick it up in a different way

Is It a Dip or a Spread?

Yes!

It’s most certainly both, depending on the context. So I’ve decided to call it a dip when it’s standing out there on its own, all proud, in a starring role, and call it a spread when it’s a supporting character. 

We first made this tangy-creamy horseradish concoction to spread on onion rolls for a roast beef panini with grilled onions and cheddar.

Score! It was ROCKIN’! It was so good that I needed an extra serving of the spread on the side, for dipping.

The recipe yields about 1¼ cup, which is way more than you need for two paninis, so there were leftovers to play with.

Yay! The Duchess of Leftovers (that’s me) strikes again. 

I made roast beef roll-ups featuring dollops of the horseradish spread.

Boom! Another hit. The recipe is below.

I served it as a dip for boudin balls on an appetizer platter, among other yummies, and it was awesome for that, too.

This weekend, we featured the dip on a vegetable grazing board at a wine and cheese party. My friends, it was the first time I ever saw guests eat more vegetables than cheese! 

We also served Tom’s Smoked Salmon at this party, so I put a dollop of the horseradish dip on it and OMG, the only description I can conjure is an oldie but goodie: a match made in heaven.

I hope you get the point – this tangy-creamy horseradish dip/spread thing is a WINNER and deserves to be on the menu for dinner. 

So Many More Ways to Enjoy It!

As our relationship matures with our creamy-tangy horseradish dip/spread thing, we foresee many more pairing celebrations:

  • A condiment for fried green tomatoes
  • A spread for a ham or turkey sandwich
  • A spread for all kinds of crostini, whether atop little breads or crackers, or rounds of cucumber or carrots
  • A filling for celery boats, then topped with [yummy thing of your choice]
  • A dip for fries, or even better, sweet potato fries (I think I’m a genius for thinking of that, don’t you?)
  • A dip for boiled shrimp, so much better than pedestrian-plain tartar sauce
  • A starring role as a dip on its own on your Thanksgiving or Christmas table – what a lovely condiment for turkey or ham
  • Speaking of the holidays, what about using it as a spread for that leftover roast turkey sandwich alongside the cranberry?
  • A fancy condiment for roast beef or steak
  • Or, for that matter, a fancy condiment for a cauliflower steak, or a hispi cabbage steak
