I love it when people make my recipes and put their own spin on it. Look at this beautiful sandwich in the Pleasant Peasant blog that’s a riff on my Tuscany-Texas Goat Cheese Spread. Yum!

Greg has stopped blogging for a while, so I don’t think he’d mind if I summarize his recipe.
First, gather the ingredients for our Tuscany-Texas Goat Cheese Spread. You’ll find it here:
Instructions
- Mix all spread ingredients (except goat cheese) in a bowl: capers, sun-dried tomatoes, black olives, green onions, chopped tomatoes, garlic, fresh oregano, salt & pepper, and olive oil.
- Include the flavorful oil from the sun-dried tomato jar and a splash of apple cider vinegar to rinse it out.
- Hollow out a loaf of French bread.
- Brush the inside with olive oil mixed with garlic paste or garlic mayo and toast at 350°F until crisp.
- While still warm, line the cavity generously with goat cheese.
- Fill with the tomato-olive mixture, slice, and serve.
This is a rustic, flavor-packed sandwich version of the spread — brilliant and beautiful. Thanks, Greg!
