Mustard sauce is a taste memory from my childhood, and I found Mom’s recipe last weekend so I could recreate it. This was imperative because we recently got a fryer and planned to have fried oysters and hushpuppies for our inaugural fried meal.
Mustard Sauce is a Must with Fried Fish
Where I grew up on the Southeast Texas coast, mustard sauce is a must if you’re having fried fish, right alongside the other sauces you’d expect, like tartar or cocktail sauce – or even in place of them. It’s high time this hard-working, versatile and tangy little sauce got a spot here in the recipe pages at Glover Gardens, and I wanted to see how it would stand up to fried oysters.
It was a great choice! With only four ingredients, the mustard sauce is both piquant and creamy, with the unmistakable twang of mustard and horseradish pepped up with a healthy dose of cayenne, and a dollop of mayonnaise to smooth it all out. This sauce is going into our regular rotation.
Creole Mustard Sauce Recipe
Preparation time: 5 minutes; makes 1 cup.
- ½ cup Creole or coarse-grain mustard
- ⅓ cup mayonnaise (I use “light” mayo)
- 2½ tsp. prepared horseradish
- ¼ tsp. cayenne pepper
Stir all ingredients together until combined and chill until ready to serve.
Note: a little mustard sauce goes a long way, so when I modified the amounts in Mom’s recipe, I also reduced the batch size. Just double it if you’re feeding a crowd.
This recipe is as easy as gathering all of the ingredients and mixing them up.
