I’m sharing this as a public service to Glover Gardens readers: I know how much you care about eggs, because whenever I post about them, you click like crazy.
I knew most of the tips in the article already, but learned at least one thing: I should be whisking my eggs longer when scrambled is in their future. I also have a tip to add that wasn’t covered in the article: to get eggs to room temperature quickly (so that they will cook more evenly), put them in a dish of tepic water.
Eggs are so versatile and easygoing; you can make a zillion things with them and they can be a meal unto themselves. They’re appropriate for breakfast, lunch or dinner. They’re a complete protein, not very caloric, and inexpensive.
